Black Bean Soup with Poblano Chiles
serves 4
Ingredients
- 2 ea Poblano chiles, fine chop
- 1 ea sweet onion, coarse chop
- 4 cl garlic, crushed
- 1/2 t ground cumin
- 1/2 t chipotle chili pepper
- 1 cn tomatoes, diced
- 4 C chicken broth
- 2 ears corn
- 2 cn black beans
- cilantro, chopped
- queso fresco
Instructions
- Sauté the onion, chiles, and garlic. Add the spices, tomatoes and chicken broth, bring to a boil, and simmer.
- Add the beans and corn and cook until warmed through.
- Plate, with cilantro and cheese, and serve.
